Abstract

Tomato fruit is a horticultural product that perishes easily, so it must be handled carefully from the time of harvest so that the quality can be maintained until it reaches the hands of the consumer and obtains a high selling price. the objective of the study was to determine the effect of coating chitosan and agar-agar on increasing the storability of tomatoes. The research method used was Completely Randomized Design (CRD). The treatment used in testing tomatoes during postharvest was without coating (control), chitosan, agar and chitosan were the same as agar-agar with three repetitions. The observed variables tested were fruit damage, weight loss, total dissolved solids and color test (hedonic) for 15 days. The results of this study indicate that the combination of chitosan and agar can extend the life of tomatoes as seen from fruit damage, weight loss, total dissolved solids, and hedonic tests compared to other treatments.
