Climacteric fruit is a fruit that after being harvested will be easily damaged so that it requires post-harvest processing that can overcome problems when shipping to consumers. Sapodilla fruit is a climacteric fruit.. One of the right solutions is to reduce fruit ethylene gas using activated charcoal as an absorbent. This study aims to analyze the use of activated charcoal in inhibiting fruit ripeness and to determine its effect on weight loss and vitamin C content in sapodilla fruit during a 10-day storage period. The analysis used in this study was One Way Anova with variations of activated charcoal as treatment factors consisting of control treatment, 1 gram, 3 gram and 5 gram and weight loss and vitamin C as quality parameters. The results showed that activated charcoal had no effect on decreasing weight loss and vitamin C in sapodilla fruit.
