Abstract

Banana is a fruit plant originating from Southeast Asia, such as Malaysia, the Philippines, India, Brazil and India. Bananas have many ingredients and many benefits that are useful for the body, such as fruit flesh can be used as food, banana peels can be used to make banana vinegar with a fermentation process, banana weevils can be used as soda as a raw material for soap and potassium fertilizer. The purpose of this study was to analyze the ability of activated charcoal from bidara (Ziziphus mauritiana) as an oxygen absorber to extend the shelf life of ketip bananas (Musa paradisiaca).The design of this study is observation, namely the type of adsorbent material, with the treatments were P1 : Without adsorbent (control), P2 : 5g activated charcoal, P3 : KMnO4 5g. Each experiment was repeated 3 times, so that 9 experimental units were obtained. control ketip bananas (without adsorbent scorch) after 5 days of storage obtained a score of 4 which means that all the fruit is yellow and separated from the comb. Observation for control was stopped on day 5 because the fruit was considered unmarketable. While bananas are stored using activated charcoal (P2), that is, their freshness can be maintained until the 11th day and cannot be separated from the comb. Observations were stopped on day 11 because fungal growth began to appear at the base of the banana comb.
