Abstract

Trained panelists are an important part of testing the sensory profile of a food product. Gradual selections are needed to find specific criteria of the panelist. This study aimed to obtain specific trained panelist for Sumbawa ruminants milk testing which carried at the Food and Agroindustry Laboratory, Sumbawa University of Technology. The panelist selection methods used: basic sensory test, triangle test, threshold test, and panelist training. Based on the selection results, 10 trained panelists were obtained from Sumbawa University of Technology from various study programs. The selected panelists were then trained to improve the panelists' ability to assess the sensory profile of ruminant milk
